Victoria Sandwich

Ingredients

  • 8 oz sugar
  • 8 oz butter, chopped
  • 8 oz all-purpose flour
  • 1 tsp baking powder
  • 4 eggs
  • 0.333333 tsp vanilla extract (optional)
  • 0.25 jar raspberry jam
  • 0.5 cup whipped cream (optional)

Instructions

Preheat oven to 375F. Grease or line two 8" round cake tins.

1. With a stand mixer, mix sugar and butter until fluffy.
2. Add in eggs, one at a time. Also add vanilla during this step, if desired.
3. Sift together baking powder and flour. Add to mixture on lowest speed; mix until just incorporated.
4. Transfer mixture to cake tins. Smooth out, leaving a dip in the middle to allow cakes to rise.
5. Bake in middle of preheated oven for 25 minutes.
6. Turn out cakes onto rack and allow to cool.
7. Sandwich together with jam, and whipped cream if desired.

Notes

Chocolate variation: replace 4 1/4 Tbs flour with cocoa powder. Use cream or buttercream instead of jam.
