Howard Family Beef Hash

Ingredients

  • 1 lb beef, cooked
  • 1 onion
  • 2 lb potatoes
  • 1.5 cups beef stock

Instructions

1. Chop up the leftover beef into 1/4 to 1/2 inch cubes, removing any gristle. Add to the pot.
2. Pour in the beef stock.
3. Chop the onion coarsely and add to the pot.
4. Peel the potatoes and chop into 1/2 to 3/4 inch cubes. Amount isn't critical, just keep adding until the ratio looks good.
5. Add seasoning to taste.
6. Cook on high pressure for 10 minutes. Naturally release the pressure.
7. Thicken gravy with cornstarch if needed.

Note: original recipe was for the slow cooker - 2 hours on full and then a couple more on low.

Notes

Quantities are not critical - it will depend on what leftovers you have!
