Goulash

Ingredients
- 1 lb beef stew meat
- 1 whole onion, sliced
- 1 whole red pepper
- 1 can RoTel tomatoes
- 1 pt beef stock
- 1 tsp garlic, minced
- 1 tsp mixed herbs
- 1.5 Tbs paprika
- 1 tsp cayenne pepper
- 2 bay leaf
Instructions
Fry the onion, pepper and beef in a little oil, turning until browned on all sides. Add all other ingredients and slowly heat to simmer for about 3 hours. Thicken gravy with cornstarch if needed.
Instant pot: try cooking on high pressure for 30 minutes, then release the pressure naturally.
Serve with potatoes or noodles, and vegetables of your choice.
