Beef Pot Roast with Potatoes and Carrots

Ingredients

  • 2 lb beef roast
  • 1.25 c chicken stock
  • 1 Tbs olive oil
  • 2 lb potatoes, cubed
  • 1 lb carrots, peeled

Instructions

1. Select "Saute" to pre-heat the instant pot. When the word "Hot" appears, add a swirl of olive oil and sear the roast well on all sides.
2. Deglaze the inner pot with chicken stock.
3. Close and lock the lid. Pressure cook on high for 45-50 minutes pressure cooking time (depending on thickness).
4. Release the pressure using quick release.
5. Add the potatoes and place the whole carrots on top.
6. Pressure cook for 10 minutes.
7. Quick release.
8. Remove the potatoes, carrots and beef. Let the beef rest under alumninium foil, and chop the carrots into slices. Serve.
