Beef and Sweet Potato Chili

Ingredients

  • 1 Tbs olive oil
  • 1 lb ground beef
  • 2 cup chopped onion
  • 1 medium serrano chile, seeded and finely chopped
  • 1 cup red bell pepper, chopped
  • 2 Tbs chili powder
  • 0.5 tsp chipotle chili pepper, ground
  • 0.5 tsp salt
  • 3 clove garlic, minced
  • 1 cup beef broth
  • 1 large sweet potato, peeled and cut into 3/4-inch chunks
  • 28 oz fire-roasted diced tomatoes, undrained
  • chopped cilantro (optional)
  • sliced green onions (optional)

Instructions

Heat the olive oil in a large pot over medium-high heat. Add the ground beef, onion, serrano chile, and garlic and cook, stirring frequently and breaking up the meat with a wooden spoon, until the meat is browned, about 5 minutes.

Stir in the tomatoes with their juices, broth, sweet potato, bell pepper, chili powder, chipotle, and salt and bring to a boil. Reduce the heat to low, cover, and simmer, stirring occasionally, until the sweet potato is tender, 20 to 25 minutes. If desired, season with additional salt. Serve the chili topped with cilantro and green onions, if desired.
